20 Minute Meals
Chicken Cacciatore

-
1.5 lb chicken breast
-
2 tbsp of avocado oil
-
1 jar tomato sauce
-
1/4 cup red wine or balsamic vinegar
-
2 green peppers
-
package of mushrooms
-
1/2 lb of whole wheat pasta
-
Parmesan cheese
1. Bring oil to a medium/high heat & add chicken. (3-4 minutes per side)
2. In the meantime, boil water for pasta & chop green peppers.
3. Add peppers, mushrooms, sauce, wine/vinegar to chicken and cover at medium heat.
4. Add pasta to boiling water.
5. Once pasta is done cooking, drain and serve with chicken & sauce. Add Parmesan cheese.
Additional Recipes


1. Put broiler on high.
2. Steam 2 cups chopped cauliflower in microwave for 2 minutes.
3. Add cauliflower to 1 1/2 tbs of oil to a pan and sauté for 5 minutes. Add 2 cups of spinach.
4. Whisk 8 eggs, salt, pepper and 1 tsp garlic powder.
5. Toss egg mixture to the veggies and cook 4-5 minutes until the bottom of eggs are cooked.
6. Sprinkle 1/2 cup of shredded sharp cheddar cheese on eggs and place under the broiler another 4-5 minutes, until golden brown.
